      I did watch the whole video, and it seems like you’re confusing glucose with sucrose.

      High fructose corn syrup is a mixture of 45% glucose & 55% fructose.

      Sucrose (cane sugar) is a disaccharide composed of 1 fructose and 1 glucose, qnd breaks down into those in an acidic environment.

      Glucose and fructose are monosaccharides that don’t break down into other sugars.
