    Chemistry YouTuber Reactions found the surprising result that there was no chemical difference between sugar and high fructose corn syrup in soda. The problem is that the sugar breaks down into fructose within weeks because of the acid in the soda.

      Little more nuanced than that.

      Cane sugar (sucrose) breaks down in soda into its constituents 50% glucose 50% fructose.

      Hfcs isn’t a 50/50 ratio it’s 45% glucose 55% fructose in soda. (42/58 ratio in other products)

      So does the cane sugar Coke taste different because it’s just fresher, or is there something else at play? Because it definitely tastes different.

        It will taste different only if you get it fresh.

        This is something I’ve experienced. Sometimes Mexican coke tastes great and sometimes it tastes exactly like regular coke.
